Recipe 9 - Apple coleslaw (Serves 4)
Recipe
450g white cabbage
1 medium onion
2 apples, peeled and cored
175g peeled carrots
150ml low fat mayonnaise
Method
Prepare and finely shred the cabbage
Grate the apple and carrot
Combine the salad ingredients in a large mixing bowl
Fold in the mayonnaise and season with pepper
Add 125g chopped walnuts or raisins for added texture, or for a more substantial coleslaw that can be used as asandwich or jacket potato filling, add 125g of grated cheese
